The Go-To Kale dish!...Sauteed Kale with Mushroom and Onions

As I have mentioned before, I had a one year love affair with kale.  Don't get me wrong, we still have dates on a weekly basis, but we had to slow things.  We decided eating the same kale dish every single night was a bit too much.

I am not sure why I fell in love with this creation so much, but I did.  And, every time I make it now, I say to myself "damn, this is good".

Sauteed Kale with Mushrooms and Onions


I have no idea what makes this so good.  It literally is just the mixture of those veggies and some seasoning.  The mushrooms and red onions counteract the bitterness of the kale and makes it mouth watering!

Oh yeah, it only takes 5 minutes to make!





Directions/Ingredients:
2 c kale
1/4 c sliced button mushrooms
1/4 red onion sliced
1 garlic clove chopped
1/2 tbsp evoo
s + p
nutritional yeast (optional)

Heat evoo at medium in saute pan.  Add in garlic and red onion.  Saute for about one minute, add in kale and mushrooms.  Season with s + p.  Sprinkle with nutritional yeast (optional).  Serve!
