See you tomorrow!....Summer Corn Salad

Ever wonder why when you eat corn, the corn kernels come out whole the next day?  Well, it's quite simple.  Millions of years ago, our digestive systems were different. Primitive man was not a big meat eater. Primitive man had a digestive system with a longer digestive tract that was far better equipped to digest plant and vegetable matter. Back then, the appendix likely played a role in digestion -- a role it does not play today.  But, hey!!!-  Us vegans shouldn't really have this problems them, right?

Ok, enough about that.  Let's get into the fun stuff!  It is summertime and grilling season!  This is a great salad to accompany a main dish and it's something a bit different than doing just traditional corn on the cob.  Run to the store and grab a few ears!

Summer Corn Salad



I did not cook the ears of corn, but if you prefer your corn cooked, just toss it in boiling water for a few minutes.

Also, keep in mind raw corn is a bit more difficult to digest than cooked corn.





Ingredients/Directions (yields 4 servings):
2 corn on the cobs, kernels removed
1/2 can black beans
1/4 red onion sliced
1/2 avocado cubed
handful of cilantro
1 small garlic clove chopped finely
1 small jalapeno (seeds removed) finely chopped
cilantro-lime vinaigrette

Combine all above ingredients and let those flavors marinate.  Enjoy with your favorite summertime main dish!!!
